Roasted Sausage and Veggies

 

Ingredients: 

6-8 small/med red potatoes (cut into smaller chunks)

2 cups trimmed green beans

1 large head of broccoli

1 med zuchinni

1 med summer squash

13 oz smoked turkey sausage (not pictured because the kids had already eaten it all)

1/4th cup olive oil

1 tsp paprika

1/2 tsp garlic powder

1 tbs oregano

1 tbs parsley

1/2 tsp salt

1/4 tsp pepper


Preheat oven to 400. Cut up veggies then mix all seasonings (paprika, garlic powder, oregano, parsley, salt, pepper) in a small bowl. Put aluminum foil on two sheet pans and coat lightly with cooking spray. 

Put veggies and sausage on pans then pour 1/4 cup of olive oil across (about 1/8th cup for each pan). Then sprinkle seasoning across and mix with hands to ensure even coating of seasoning. 

Bake for 15 minutes then switch pans (top now on bottom and vice versa) then bake for 8-10 minutes more. 

Grate parmesan cheese on top (optional)
