Ingredients
1 TB olive oil
1 large onion, diced
1 bell pepper, diced (any color)
2 C carrots, sliced
4 cloves minced garlic
9 C chicken broth
1 1/2 tsp dried thyme leaves
2 TB fresh chopped parsley or 2 tsp dried parsley
1 tsp salt
1/4 tsp pepper
9 oz tortellini
1/3 C cream or milk
1/2 C frozen cut leaf spinach, or 1 C fresh baby spinach leaves
2 C cooked chicken, cubed This is my favorite way to cook the chicken.
Directions
Add olive oil and onions to a large pot and saute three minutes. Add pepper, carrots, garlic, and saute another three minutes. Add chicken broth, thyme, salt, and pepper. Bring to a simmer and cook about 15 minutes until the vegetables are soft. Add tortellini and cook 10-14 minutes until al dente. Add cooked chicken, cream/milk, and spinach. Add more salt and pepper to taste.
