Swedish Meatballs



These Swedish meatballs are a family favorite that never grow old. They have great flavor and are kid friendly (or at least our somewhat picky kids enjoy them!). We've tried the famous IKEA meatballs, but in our opinion they are nowhere as good as these.

Ingredients
20 oz ground beef or turkey (about 1 lb will do just fine)
1/2 C chopped onion
1 egg, beaten
Dash of pepper
1 1/2 C bread crumbs
1 TB dried parsley
1/2 tsp salt
1 10 oz can cream of chicken or mushroom soup
2/3 C water

Directions
In a large bowl, mix together very well the meat, onion, egg, pepper, bread crumbs, parsley, and salt.  In a medium bowl, mix together the cream soup and water. If you like a lot of sauce with your meatballs, you can double the amount of soup and water. I do this especially when we are having company.

Form meatballs with the contents of the large bowl and place them in a large frying pan. Cook them in a large, pam-sprayed frying pan until brown on all sides. I turn each meatball 3 times and cook about 1 min each turn. Add the soup/water mixture, turn the heat down to a simmer, and cook covered for 30 minutes. I usually use a spatula and stir the meatballs part way through the cooking time. Serve over rice.
