100% Whole Wheat Waffles

My son is always asking for waffles and I've had the hardest time finding a keeper--until now! I love this recipe because it's the perfect amount of crunchiness that we like. This one's also a keeper because it's very simple, quick, and healthy. 



Whisk the following in a larger mixing bowl. Whisk for a good minute so that the baking powder has a chance to mix in with the flour. This should make for fluffier waffles in my experience.

1 1/2 C whole wheat flour
2 TB sugar 
2 tsp baking powder
1/2 tsp salt

Then whisk the following in a smaller mixing bowl:
1 large egg
1 1/2 C milk
1/3 C oil

Add the wet ingredients to the dry ingredients, cook according to the directions of your waffle maker (don't forget to spray with cooking spray), and enjoy!
