Yogurt Pancakes

These are my new favorite pancakes. I think I could eat them every day! Adapted from here.

Ingredients (makes about 16 medium-sized pancakes)
2.5 C 100% white wheat flour (can use white all purpose flour as well)
1 TB granulated sugar
1.5 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
1.5 C plain greek yogurt (we love the Costco Kirkland brand)
1.5 C milk
3 eggs
1/3 C oil

Heat electric griddle to 325 degrees. 

Whisk the dry ingredients in a large bowl and the wet ingredients in a separate bowl. Add the wet to the dry and mix/fold gently just until combined. Be careful to not over mix. 

These pancakes will be THICK. That's okay! They will just need a bit longer to cook on each side, and this is also why I cook them at a lower temperature. They will also fluff up quite a bit, so measure them out on the small side. 

When we have company, I increase the amounts by 1/3 for more pancakes.

3.5 C flour
1 TB sugar
2 tsp baking powder
1 tsp soda
1/2 tsp salt
2 C plain yogurt
2 C milk
4 eggs
1/2 C oil
