Fajitas


This is one of my husband's favorite dinners. We make it often, and I have to remember where to find the seasoning recipe every time and how much of everything, so here it is finally written out. :) I use this fajita seasoning, but omit the cayenne pepper (or just use a pinch) to be more kid friendly.

Ingredients
1 lb uncooked chicken breast, sliced into very thin pieces
1 yellow pepper, sliced thin
1 red pepper, sliced thin
1 medium yellow onion, sliced into bite sized pieces
Fajita seasoning mix (see below)
Tortillas (we like the Tortilla Land brand that we cook ourselves)
Lettuce or spinach
Sour Cream

Fajita seasoning mix ingredients
1 TB corn starch
2 tsp chili powder
1 tsp salt
1 tsp paprika
1 tsp white sugar
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp cumin

Directions
Saute chicken, peppers, and onion un
til nearly cooked through. Add the fajita seasoning mix, plus about 1/4 C water. Simmer on low for about 10 minutes. Cook/heat tortillas and fill with meat/pepper mixture, greens, and sour cream.
