Fried Rice


This fried rice is pretty simple. You may not have the sesame oil in your kitchen, but we make this often enough that we always keep some on hand. It's well worth it for the taste that it adds!

I like to serve it with egg rolls and won tons from Costco (I know, not made from scratch, but they are still some of the few frozen foods we enjoy). One of my favorite meals! Adapted from here.

1 TB olive oil
2 eggs, beaten
1/4 tsp salt
2 TB olive oil
1-2 carrots, very finely chopped
1/2 C frozen peas
1 tsp better than bouillon
2 TB water
1/4 tsp garlic powder
3 TB soy sauce
2 tsp sesame oil
1 C rice, uncooked (or 4 C cooked)

Directions
If you don't already have leftover rice, start some cooking first thing. On medium heat place 1 TB olive oil in a large saucepan or wok. Scramble the beaten eggs and salt briefly and set aside.

Add 2 TB olive oil to the same saucepan or wok. Add carrots and peas. Stir-fry for 2 minutes. Add all the rest of the ingredients (except the rice and eggs) and mix well. Add the rice and mix well again, and lastly the eggs. And that's it!
