Amish Baked Oatmeal
This recipe is slightly adapted from my cousin, who grew up in Hershey, PA (close to Amish country). Amish baked oatmeal makes a great breakfast. Sometimes I even make a batch as "breakfast for dinner" and then we can have it for breakfast throughout the week as well. One batch will last for several days in the fridge.
Ingredients
1 C oil
1 1/2 C brown sugar
4 eggs
1 TB baking powder
1 1/2 tsp salt
2 C milk
6 C uncooked quick oats
2 apples, peeled and chopped
2 tsp cinnamon
1 C dried fruit (raisins or craisins), or fresh/frozen blueberries
cream or milk (if desired)
Directions
Preheat over to 350 degrees. Mix oil, sugar, and eggs in a large bowl with a whisk. Mix in baking powder, salt, and milk. Add oats and stir well. Stir in fruit. Pour into a lightly greased 9X13 baking pan. Bake for 25-30 minutes or until the edges begin to brown. Serve warm with a dash of cream and/or milk, if desired.
