100% Whole Wheat Buttermilk Pancakes from Heaven

I got this recipe from my sister a month or so ago, and we are addicted. They are nice and fluffy with great flavor, not too dense like other wheat pancake recipes. This recipe also freezes really well. Just defrost the pancakes in the fridge or microwave and pop them in the toaster for a minute or two right before eating them.


(makes 10-12 pancakes)

1.5 C 100% whole wheat (can use red or white wheat)
1/2 tsp salt
2 tsp baking powder
1 tsp baking soda
3 TB brown sugar

1.5 C buttermilk (if you don't have buttermilk, I recommend putting it on your shopping list and holding off on this recipe until you have it rather than making your own substitute. Trust me, it is so worth it!)
2 eggs
1/4 C oil 


Mix the dry ingredients with a whisk in a large bowl. Add the wet ingredients and stir until well mixed. The batter will be pretty thick. I use the 1/4 measuring cup from the oil to pour the pancakes on the griddle.



In a few minutes they will fluff up like this. 



And if your child likes these as much as mine, the next thing you know he'll be asking you for seconds.
