I discovered this recipe recently and we fell in love immediately. I adapted it from the original recipe (as usual!) to fit our tastes.
1 C shredded cooked chicken
1 C cottage cheese
1/4 C Parmesan cheese
1/2 C shredded mozzarella cheese
2 C spaghetti sauce
1/4 C milk
dash of pepper
8 lasagna noodles, cooked and drained
Spread about 1 C of spaghetti sauce in a 9 X 13 pan. In a separate bowl, combine chicken, cheeses, milk, and pepper. Spread 1/2 cup of cheese mixture on each lasagna noodle and roll. Arrange lasagna rolls in the sauce in the baking dish. Top with a bit more sauce, some more mozzarella, and maybe a few shakes of Italian seasoning and basil.
Bake at 375 degrees for 30 minutes or until hot.
